On a remote stretch of Baja California coastline, we still make salt the way it was made a thousand years ago. Clean Pacific seawater is drawn into shallow beds, and the sun does the rest. No refining. No bleaching. No anti-caking agents. What's left when the water leaves is exactly what we put in the box.
01 — Draw
Seawater In
We flood shallow clay beds with living Pacific seawater and let the coastal wind begin its work. As water evaporates, minerals concentrate — magnesium, calcium, potassium — the full signature of the sea.
02 — Rake
Harvested by Hand
When the crystals reach their peak, our harvesters rake them into windrows by hand, the way their families have for generations. No machines touch the salt. Every crystal keeps its structure.
03 — Dry
Finished by the Sun
The harvest dries under open sky — never kiln-heated, never chemically washed. What remains is a living salt: mineral-rich, unrefined, and honest about where it came from.
From Our Flats to Your Table
Two grinds, one source. Natural Grain finishes a dish with crunch; Fine Ground disappears into the cooking. Both leave the Baja coast exactly as the sea made them.
